

(Sugar free – Gluten free) High Fiber
Ingredients
3 tbs ground chia seeds
1 cup liquid of choice (see variations)
2 cups almond flour – King Arthurs
1/2 tsp baking soda
1 tsp baking powder
a pinch of salt
2 eggs beaten
1 tbs apple cider vinegar – organic
2 tbs liquid coconut oil
1 tsp vanilla – Watkins
2 tbs monk fruit – Lankanto organic monkfruit sweetener
directions
- Preheat oven to 350
- If using traditional muffin tins, grease and set aside
- In a small bowl, stir ground chia into liquid and set aside
- In a medium bowl, mix almond flour , baking powder, baking soda, and salt together
- In a larger bowl, beat the eggs and add vinegar, vanilla, coconut oil
- Slowly add the almond flour mixture in batches into the egg mixture. Stir until ingredients are just mixed
- Add liquid and any other ingredients depending on variation
- Spoon mixture into greased muffin cups
- Bake for 25 minutes
- Enjoy warm with organic real butter
variations
Apple cinnamon – organic apple juice or cider liquid – 3/4 apple chopped – sprinkle cinnamon in batter
Lemon poppy seed – water with 25 drops doTERRA Lemon essential oil – sprinkle poppy seeds in batter
Banana – 2 ripe smashed bananas for liquid
Blueberry – water or apple juice for liquid – add blueberries to batter
